UEES held the First Congress on Nutrition: Science, Innovation and Development.
The Universidad Espiritu Santo (UEES), through the School of Nutrition and Dietetics and the Continuing Education Unit, presented its First Nutrition Congress: Science, Innovation and Development. The event brought together leading experts in the field to explore the advances and challenges of nutrition science. This congress was aimed at professionals and students of nutrition, medicine, psychology, nursing and physiotherapy, offering a space for learning and updating of high academic level.
“This meeting is a reminder of the importance of our work in health promotion, disease prevention and improving people's quality of life,” said Adriana Perez, director of the Nutrition program.
The congress counted with the participation of a panel of international speakers renowned experts, who shared their experience and knowledge. Among the invited experts were Paulina Lopez of Mexico, a leading medical nutritionist specializing in clinical nutrition and bariatric surgery; Aitor Sanchez from Spain, well-known nutritionist, science communicator and author expert in food legislation and public health; and Samuel Durán of Chile, nutritionist with a PhD in Public Health, researcher and reference in nutritional policies in Latin America.
Specialists at the final forum stressed that the important thing and the priority is to take fruit, vegetables, vegetables, take less ultra-processed, less sausages and less alcoholic beverages, more water but when there are fads such as intermittent fasting among others it confuses the population. “We have people who are more concerned or put a potato in the fridge so that it develops resistant starch instead of eating salad or having fruit for dessert,” Sánchez pointed out.
Throughout the day, crucial and highly topical issues such as microbiota and digestive health, personalized nutrition and hormonal health, eating disorders and intuitive eating, physical exercise and nutrition in older adults, and food legislation and public policy were addressed. The format of the congress included keynote speeches, hands-on workshops y discussion tables, The event allowed attendees to delve deeper into each area and actively participate in the dialogue with the experts. This event represented a unique opportunity to connect with the cutting edge of nutrition and holistic wellness.
